In these uncertain times, we’re looking to minimise stress wherever we can. Recipe developer Emma from @elfoodielife has rounded up 4 of her simple yet delicious recipes that we hope will brighten up your day.
Where possible, we’ve tried to use store cupboard staples that many of us will have at home, but feel free to make any swaps if you’re missing certain ingredients. Where we can’t all get hold of exactly what we want at the moment, it’s a great opportunity to get creative with our cooking, so we hope these recipes bring some inspiration to keep your meals interesting.

Serves: 2 | 5 Minutes Preparation Time | 15 Minutes Cooking Time
1 Large Chicken Breast
1 Carrot
1 Pepper
½ Head Broccoli
1 Cup Frozen Peas
1 Spring Onion
1 Pack Microwave Rice
1tbs Sesame Seeds
Rice Sauce
3tbs Soy Sauce
1tsp Sesame Oil
Teriyaki Sauce
¼ Cup Light Soy Sauce
½tsp Sesame Oil
1tbs Brown Sugar
1tsp Honey or Maple Syrup
1tbs Crushed Ginger
1tsp Crushed Garlic
1tbs Mirin
1 Cup Water with 1tsp Cornflour (mixed together)
Ok, so this is my FAVOURITE way to eat chicken breast at the moment. Coated in delicious moroccan spices and charred beautifully.

Steak and tacos, what a combination. Tender and juicy chilli coated steak, paired with fruity mango and sharp lime, then cooled with creamy sour cream. Need I say more?
